Jan’s Viking Diet Granola Recipe
INGREDIENTS:
1 ⅔ c. rolled oats
2 c. raw, unsalted nuts, chopped
¼ c. sunflower seeds (raw, unsalted)
¼ c. pumpkin seeds (pepitas) raw, unsalted
⅓ c. honey
2 Tbsp maple syrup
2 Tbsp EVOO (extra virgin olive oil)
2 Tbsp cocoa powder
1 Tbsp chia seeds
1 tsp cinnamon
1 c. chopped, dried fruit of your choosing (I use tart cherries, blueberries, and cranberries, or raisins in a pinch)
INSTRUCTIONS:
Preheat the oven to 425 degrees F. Prep a baking sheet with parchment paper.
Mix the oats, nuts, and seeds together in a large bowl, then spread them on the prepared baking sheet and bake for 10 minutes.
While the granola is baking, mix the liquid ingredients together in a glass measuring cup.
Zap these in the microwave for 10 seconds to make them easier to drizzle. Do not overheat.
Remove the granola from the oven and place the pan on a rack. Drizzle with the liquid mixture and stir.
Sprinkle the cocoa powder, chia seeds, cinnamon, and fruit onto the granola and mix well.
Return to the oven for another 5-8 minutes or until a nice golden color.
Let it cool completely, stir occasionally, and sample freely.
Store in air-tight containers at room temperature. Enjoy!
